Zaatar Roasted Vegetables


  • 1 pound mixed vegetables (such as bell peppers, onions, zucchini, and eggplant), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons of Baba's Zaatar Herb Blend


  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, toss the vegetables with the olive oil, Zaatar Herb Blend, salt, and pepper until they are evenly coated.
  3. Spread the vegetables out in a single layer on a baking sheet.
  4. Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and caramelized.
  5. Serve the roasted vegetables warm, as a side dish or as a topping for grains, such as quinoa or couscous.

Zaatar is a Middle Eastern spice blend that consists of thyme, oregano, sumac, and sesame seeds. It adds a bold and aromatic flavor to the roasted vegetables. Enjoy!
